Recipe - Vegetarian Burrito

First there was the electric pie maker and more recently there has been the advent of the electric sausage roll maker into the kitchen gadget category. You can pick one of these machines up very cheaply now.
If you are not a huge fan of fatty pastry, I have found an alternative use for the sausage roll maker that does not rely on pastry. Use tortillas for the wrapping and you can make a lovely burrito in these little machines.
Ingredients
Serves 8
- 2 Tbsp. olive oil
- 1 onion, finely chopped
- 1 cup grated carrot
- 1 Tsp. crushed garlic
- 1 Tsp. dried oregano
- 1/2 Tsp. ground dried coriander
- 1/4 Tsp. ground dried chili
- 1 x 400g can red kidney beans, drained
- 1/2 x 415g can nutmeat, roughly chopped
- 1 Tsp. vegetable stock powder
- 1/4 cup chopped fresh coriander
- 8 mini (20 cm) tortilla/wrap, white or wholemeal
- 1/2 cup grated cheese
Method
- Sauté onions, carrot, garlic paste and the dried herbs and spices until softened.
- Place the drained beans in a small food process and blitz. Leave a few chunky bits, you do not want to go as far as a smooth paste. Set aside.
- Place the nutmeat into a small food processor and blitz to a fine mash. Set aside.
- Combine the beans, nutmeat, stock powder and fresh coriander with the onion and spice mix.
- Place 1/2 cup of mixture along the edge of each wrap. Sprinkle with grated cheese.
- fold up the sides to meet at the middle. This will give you the correct length for the sausage roll maker indentations.
- Roll up the wrap to fully enclose the mixture.
- Place 4 of the burrito rolls into the sausage roll maker, seam side down. Close and secure the lid and cook until brown and heated through. Repeat with remaining burritos.
- Serve with the condiments of your choice.
About the Recipe
- This recipe is suitable for vegetarians and can be modified to be suitable for vegans by omitting the grated cheese or replacing it with a vegan friendly option.
- If you don't like fresh coriander, and I know that there are some of you out there who don't, just substitute flat leaf parsley.
- Nutmeat, under the Vegie Delight brand, can be found in many health food stores and some of the major supermarkets, usually in the health food aisle. It is a peanut and wheat gluten based meat substitute, which is suitable for vegans. There is a trick to getting the product out of the can. Here are some tips from the Vegie Delights internet site. "Opening Instructions. 1) Open can on the end without the ring pull using a can opener. 2) Loosen the Nutmeat by running a table knife around the inside of the can between the can body and the Nutmeat. 3) Open the ring pull lid on the opposite end. 4) Carefully push the Nutmeat through the can from the ring pull end." - Massel make a range of vegan stocks and stock powders. You can also get low salt varieties if that is an issue for you. They are a staple item in my pantry.
- Substitute borlotti bead or black beans for the red kidney beans if that is what you have.
- Choose either white or wholemeal tortilla, both will work just as well. I used the "Mission" brand.
- If the wraps are a little old, they can tend to be a bit dry and they may crack when you try and roll them up. If this is a problem, you can help to soften the tortillas by place then in the microwave for a few seconds.
- If you are making a few of these, put them aside in a preheat the oven (100C) to keep them warm while you are cooking the rest of the batch.
- You can make the filling ahead of time and store it in the fridge for assembly later.
