Recipe - Bircher Muesli

For me, one of the luxuries of staying at a good hotel is the Bircher Muesli for breakfast. But why wait for holidays, when you can have the healthy breakfast at home any time, and it is so quick and easy to make.
Ingredients
Serves 4
- 3 cups traditional rolled oats
- 1/4 cup chopped apricots
- 1/4 cup sultanas
- 2 cups unsweetened cloudy apple or pear juice
- 2 x 170g pot plain Greek yoghurt
- 1 Tbsp. lemon juice
- 1 Tsp. vanilla paste
- 1/4 cup slivered almonds
- 1 Tbsp. sunflower seeds
- 1 apple, coarsely grated
- 2 Tbsp. honey (optional)
Method
- Place oats, apricots and sultanas in a large bowl.
- Pour the apple juice over the oats and fruit, stirring to combine. Cover and refrigerate overnight or for at least 2 hours.
- Just before serving, stir through the yoghurt, lemon juice, vanilla paste, almonds, sunflower seeds and grated apple.
- Spoon muesli into bowls. Top with a drizzle of honey.
About the Recipe
- This recipe is suitable for vegetarians and if you substitute a vegan yoghurt (eg: coconut) and either leave out the honey or use another sweetener (eg: maple or agave syrup), is also suitable for vegans.
- Greek yoghurt is usually thicker than regular yoghurt as it is strained to remove some of the liquid whey that occurs when milk is cultured or allowed to ferment.
- You can get cloudy pear and apple juice in the chiller section of your supermarket or along with the long-life juices. Standard apple juice is quite brown and does not make for a nice coloured dish.
- Leave the skin on the apple, it is healthier for you, and it adds colour and texture to the dish. I use a mandolin slicer with a julienne attachment, rather than grate the apple, but either works fine.
- It is best to use traditional/regular rather than a quick cook variety of oats for this dish. The traditional oats will stand up to the soaking and will have some texture left.
- The dish is best if started the night before. Two minutes of effort before you go to bed is worth the results in the morning. You can add all of the ingredients in at once and leave them all over night, if you like. The lemon juice will stop the apples from going brown, but the nuts may not be quite as crunchy though. For breakfasts on the run, make the batch up and place into individual jars for a hasty morning exit from the house with a healthy breakfast in hand.
- Don't just stick with these ingredients. Mix up the fruits, seeds and nuts to suite yourself. You can also top it off with whatever fresh fruit you like. Bananas or raspberries are quite nice.
