Watermelon and Kiwi Fruit Salad

I have taken inspiration for this recipe from the classic Greek watermelon and feta salad. The contrast of the salty feta and the sweet watermelon is quite refreshing. Adding green kiwi fruit seemed quite a logical extension to me, so I hope that you think so too. It does make such a pretty dish for the Australian Christmas table.
Ingredients
Serves 4
Salad
- 1/4 seedless watermelon, peeled and chopped into chunks
- 4 kiwi fruit, peeled and chopped into chunks
- 1/2 red onion, finely sliced
- 2 Tbsp. roughly chopped fresh mint.
- 50g feta cheese, chopped or crumbled
Dressing
- Tbsp. olive oil
- 2 Tsp. lemon juice
- Pinch salt & pepper
Method
- Place salad ingredients on a service platter or salad bowl.
- To prepare the dressing place all the dressing ingredients in a jar. Screw the lid on and shake vigorously.
- Pour the dressing over the salad and serve.
About the Recipe
- This recipe is suitable for vegetarians but not for vegans because of the feta cheese, which is an integral part of the taste sensation.
