Recipe - Pakora Waffle

This recipe came about because of my dislike for the smell of hot oil in a deep fryer and my love for pakoras, together with the recent acquisition of a waffle iron. The result is an arranged relationship of India meets Belgium in this fusion recipe.
Ingredients
Serves 3
- 3/4 cup plain flour
- 1/4 cup chickpea flour
- 1/2 Tsp. ground coriander
- 1/2 Tsp. ground cumin
- 1/2 Tsp. ground turmeric
- 1/8 Tsp. ground chili
- 2 Tsp. garlic powder
- 1 Tsp. baking powder
- 1 Tsp. salt
- 1 cup water
- 2 Tbsp. oil
- 125g orange sweet potato, peeled and grated
- 3 large spring onions, chopped (reserve some of the greens for garnish)
- Rice bran oil spray
- Vegan mayonnaise to serve
Method
- Combine the flours, spices, garlic powder, salt, and baking powder in a bowl.
- With a whisk, mix in the water and the oil to make a smooth batter.
- Add the sweet potato and spring onions.
- Preheat an electric waffle iron on medium heat and spray the surface with a little rice bran oil.
- Spread 1/3 (approx. 1/2 cup) of the batter over the hot waffle iron, close the lid and cook until golden and crisp.
- Serve topped with mayonnaise and sliced spring onion tops.
About the Recipe
- This recipe is suitable for vegetarians and vegans.
- Chickpea flour is also known as besan, garbanzo or gram flour in some countries. It is readily available in most supermarkets these days.
- If you are making a few of these, put them aside in a preheat the oven (100C) to keep them warm while you are cooking the rest of the batch.
- You may need to adjust the amount of mix per waffle iron depending on the size of your machine. I used a Breville Stainless Steel No Mess Waffle Maker. It is a good size for a couple rather than a family. I like the wrap around moat which catches and cooks any overflow, which is great for easy clean-up.
- You can buy many different vegan mayonnaises these days. Aquafaba (the cooking liquid from a can of chick peas) can be used effectively to make an egg free mayonnaise. So next time you open a can of chick peas, give it a go.
