Recipe - Greek Lemon and Herb Butter Bean Salad

Lemons are one of the most common flavours to be found in Greek cooking. I have always loved the tartness of lemons, so this Greek style salad really ticks the box for me.
Ingredients
Serves 4
- 2 x 400g can butter beans, drained and rinsed
- 1/4 cup chopped fresh flat leaf parsley
- 1/4 cup chopped fresh mint leaves
- 2 Tbsp. olive oil
- 1 Tbsp. lemon juice
- 1 Tsp. lemon zest
- 1 clove garlic, crushed
- Salt and freshly ground pepper to taste
- Slices of lemon for garnish
Method
- Combine beans, parsley and mint in a salad bowl.
- In a small screw top jar, combine the oil, lemon juice, lemon zest, garlic, salt and pepper. Screw the lid on and shake to combine.
- Pour the dressing over the beans, toss and serve.
- Garnish with a few slices of lemon.

- Use this recipe as a base. You can add other salad vegetables, for example chopped cherry tomatoes.
