Recipe - Vegged up Kedgeree

Kedgeree is a classic colonial Indian breakfast dish, usually made with rice, spices, smoked haddock and eggs. So to make a vegetarian version, I have omitted the smoked haddock, of course, but have added lots of veggies (carrots, green beans and red lentils) in its place. Personally I don't limit this dish to the breakfast occasion.
Ingredients
Serves 4
- 1 Tbsp. oil
- 1/2 Tbsp. Margarine or butter
- 1 onion, peeled and finely chopped
- 2 carrots, peeled finely julienned or grated
- 1 Tsp. mild curry powder
- 1/2 Tsp cumin seeds
- 1/2 Tsp. black mustard seeds
- 1/2 Tsp turmeric
- 1 cup basmati rice
- 1/4 cup dried red lentils
- 2 cups water
- 1 Tsp. chicken flavoured stock powder
- 1/2 cup chopped green beans
- 1/2 Tsp. salt
- 4 Eggs
- Chopped coriander or parsley for garnish (optional)
Method
- Sauté onions and carrots in the oil and margarine.
- Add spices and stir through until you can smell the spices.
- Stir through the rice and lentils
- Add the water, stock powder and the green beans
- Cover and let simmer on the lowest heat for approx. 15-20 Min. Do not open the lid or stir during this time.
- Meanwhile hard boil, peel and quarter the eggs.
- Check the rice for seasoning and add salt as required.
Serve topped with the boiled eggs and sprinkled over with coriander or parsley.
About the Recipe
- This recipe is suitable for vegetarians and if you omit the egg garnish and use a vegan margarine, is equally as vegan friendly
- Massel make a range of vegan stocks and stock powders which are flavoured to be similar to chicken or beef stock. You can also get low salt varieties if that is an issue for you. They are a staple item in my pantry.
- You could swap out green beans with green peas if that is what you have in the freezer.
- Rather than top with quartered eggs, you could push the eggs through a sieve and sprinkle them over the rice for a different effect.
- Leftovers are good for the lunchbox and re-heat well in the microwave. You might want to re-heat the rice without the egg.
